Chef Andrew Omo's Lobster and Crab Cake with Spicy Remoulade

1lb crabmeat
½ lb lobster meat
¼ cup corn
2 tsp lemon zest
1tbsp parsley
2 tsp chives
½ cup mayonnaise
1 tsp whole grain mustard
1 cup Panko crumbs
Salt & pepper to taste
1 egg yolk
1 egg

Pick through crab and lobster to remove any shell bits. Mix all ingredients and then add panko in batches until mixture just begins to crumble. Season to taste. Portion out into 4 ounce cakes. Heat oil in a thick bottom fry pan. Place cakes in oil and cook on each side until deep brown and crisp. Serve with a dab of Spicy Remoulade.

Spicy Remoulade
¼ cup Sweet Chili Sauce
1 ½ cup mayonnaise
¼ cup heavy cream
1 bunch scallion
1 red pepper
¼ tsp cayenne pepper
Finely dice red pepper, cut scallion into thin rings, and mix with mayo, chili sauce, cream and pepper.
