Lobsterpalooza continues along the Midcoast

ROCKLAND, Maine (NEWS CENTER) - Dave Cooke from Amalfi on the Water in Rockland visits the MORNING REPORT to cook one of his Lobsterpalooza featured dishes.

You can try it at home too:

Fresh Tomato Sauce


2 oz. olive oil

1  med onion small dice

3 table spoons garlic chopped fine

1/2 c. white wine

12   tomatoes

1/2 cup fresh basil

salt and pepper to taste


heat olive oil add onions saute 5 minutes add garlic cook 3 min stirring add white wine let reduce by 1/2 add tomatoes reduce heat cover cook 20 minutes stirring occationally add basil salt and pepper puree in blender



Roast Fennel Bulb

 1  fennel bulb medium dice

2 table spoons olive oil

1/2 cup white wine

salt and pepper


heat oil add fennel over med heat

stirring about 5 min  add wine put in a 350 degree oven

25 minutes may add a few table spoons of water
