ELLSWORTH, MAINE (NEWS CENTER) -- In our time spent cooking with firefighters of Maine and New Hampshire, we've discovered that their talents extend far beyond fire and rescue calls.
The town of Ellsworth has even put together a cookbook, they hope will help raise money to host their 2013 convention. We went back to Ellsworth to try one of the recipes from the book: egg and sausage breakfast casserole.
1 pkg. frozen hash browns
2 pkg. brown and serve link sausage
1 doz. eggs
1 c. milk
salt and pepper
1 pkg. shredded cheddar cheese
Butter bottom of a 13x9 inch baking dish. Place potatoes in the baking dish and add a little salt and pepper to taste. Place springking of cheese in a thin layer on top of the potatoes. Place sausage links on top of potatoes. Beat eggs with milk. Pour over top of sausage. Add remaining cheese to cover top of casserole. Bake at 350* for 40 to 45 minutes, until knife inserted comes out clean.
(Can make night before, just take dish out to warm before you place it in the oven.)
