Lemon Parsley Fish Cakes
Makes about 10 cakes

2 lbs. fish fillets (haddock, cod, pollock, etc.)
3 tablespoons olive oil
2 large eggs, lightly beaten
¼ cup mayonnaise
2 tablepoons lemon juice
¼ cup Dijon mustard
1 tsp hot sauce, such as Tabasco
1 tsp Old Bay seasoning (optional)
1 cup breadcrumbs
¼ cup chopped fresh parsley
Salt and pepper to taste

1. Preheat oven to 400°F.
2. Bake fish until cooked through. Flake into a large bowl.
3. Mix next seven ingredients together in a separate bowl. Add to fish along with breadcrumbs and parsley. Add salt and pepper. Mix gently until ingredients hold together. Shape into cakes.
4. Place finished cakes onto parchment lined baking sheets. Bake at 400 for 20-25 minutes.
