Amy Bouchard's Pumpkin Blondie's
2 1/4 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter ( 2 sticks ) softened
3/4 cup granulated sugar
3/4 cup brown sugar
1 tablespoon vanilla
2 large eggs
2 cups semi sweet chocolate chips or butterscotch chips
1 cup chopped nuts ( optional )
8 oz. cream cheese
1/2 cup granulated sugar
1 can Pumpkin ( 15 oz. )
1 tablespoons vanilla
4 tablespoons flour
2 teaspoons cinnamon
1/2 teaspoon nutmeg
Preheat oven to 375 degrees.
In a small bowl combine the flour, baking soda and salt, set aside.
In a large mixing bowl mix butter, sugar and vanilla until creamy. Add eggs until well mixed, then mix in the flour mixture until well blended. Stir in choc. chips and nuts.
Drop rounded spoonful's into muffin lined or a 15x10 brownie pan. Set aside.
Making the Pumpkin topping:
Beat cream cheese, sugar, and pumpkin until well blended. Add eggs, vanilla, flour and spices until well mixed.
Spread on top of brownie mixture or add rounded tablespoons on top of muffin cups. Bake for 20 -26 minutes until firm in the middle.
