Amy Bouchard's White Chocolate & Strawberries Cookie Sandwiches

2 sticks butter (1 cup), softened
1 ½ cups granulated sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all purpose flour
½ teaspoon baking soda
1 teaspoon salt
1 cup chopped white chocolate
1 cup chopped fresh strawberries

Preheat oven to 350. Mix flour, baking soda and salt in a separate small bowl, set aside. Cream butter, sugar and vanilla until fluffy. Add eggs until well blended. Stir in chopped strawberries. Stir in chopped white chocolate. Stir in flour mixture until well blended. Drop by the teaspoon onto parchment lined or ungreased cookie sheet. Bake for 10-12 minutes.

Cream Cheese & Strawberry Filling

8 oz. cream cheese (softened)
1 stick of butter (softened)
2 cups confectioners sugar
2 teaspoons vanilla extract
1 cup chopped strawberries

Mix cream cheese, butter and vanilla on medium to high speed until fluffy. Add confectioner's sugar and mix until well blended and fluffy. Stir in strawberries. Fill two cooled cookies with a teaspoon of filling.
