David Turin's Cranberry-Apple Gastrique

2 C Apple cider vinegar
1 ½ C Sugar
1 t kosher salt
½ t coarse black pepper
5 springs of fresh thyme

¾ C Dried cranberries
1 C Minced Granny Smith apple

Method of Preparation:
1. Combine vinegar, sugar, salt pepper and thyme in a wide sauce pan and bring to boil
2. Simmer until vinegar mixture begins to thicken
3. When liquid is of a syrup consistency of about that of maple syrup add the apples and the dried cranberries
4. Return pot to a simmer and then cook for 2 minutes
5. Remove gastrique from pot and let cool to room temp. Remove Thyme sprigs and discard.

Cranberry-apple gastrique should be served at room temp or slightly warm, but will be too thick to enjoy when it is very cold.


David Turin's Turkey Gravy

1 medium carrot, chopped
1 celery stalk, chopped
2 small onions, chopped
3 cloves garlic, chopped in half, not necessary to peel
1 t dry thyme
½ t dried sage
1 t dried rosemary
4 sprigs of fresh parsley

reserved fat from roasted turkey
5 ½ C chicken stock ( or turkey stock if available- use low sodium type if possible)

2 T butter
¼ C all purpose flour

Method of Preparation:
1. Remove cooked turkey from roasting pan and set aside to rest
2. Place roasting pan over low burner and place butter in pan, using a wooden spoon, scrape pan drippings from the bottom of roasting pan until loose
3. Add all vegetables and toss with pan drippings - place in 375 degree oven about 15 minutes until vegetables are tender
4. Remove vegetables from roasting pan and place in 2 quart sauce pan
5. Add flour to pan drippings in roasting pan, scrape around with wooden spoon until the flour is fully mixed with the fat
6. deglaze roasting pan with some of the chicken stock, being sure to get all of the bits of hardened drippings off of the roasting pan.
7. scrape the roasting pan into the vegetable pot, add remaining chicken stock, bring gravy to simmer for about 15 minutes
8. Adjust seasoning with salt and pepper
9. Strain gravy through a strainer
