Spiced and Glazed Mixed Nuts

 Spiced and Glazed Mixed Nuts

Makes 1 pound

 

1/3 cup granulated sugar

4 tablespoons unsalted butter

¼ cup freshly squeezed Clementine juice (any orange can be substituted)

1 ½ teaspoons salt

1 ¼ teaspoon ground cinnamon

¼ teaspoon ground cayenne pepper

¼ teaspoon ground nutmeg

1 pound unsalted mixed nuts*

 

Place rack in the middle of the oven and preheat to 250 degrees.  Line a rimmed cookie sheet with foil.  In a 10-inch skillet over low heat, combine all ingredients except the nuts.  Stir and cook, until the butter is melted and the sugar is dissolved.  Increase the heat to medium, add the nuts, and combine until the nuts are thoroughly coated.  Scrape mixture into prepared pan, and spread into a single layer.  Bake for 1 hour to 1 hour 15 minutes**, removing the pan from the oven every 15 minutes to turn the nuts over with a spatula. Transfer the nuts to a large sheet of foil, and spread into a single layer. Cool completely before storing in an airtight container for up to one week. 

 

*For the cooking segment, I used 10 ounces of unsalted, mixed nuts, 3 ounces cashews and 3 ounces of pecans.

 

**The nuts will be deeper in color and more caramelized when baked for 1 hour 15 minutes.
